Also the scene where he shot the sword fighter was done cos on the day Harrison Ford had a bad guts, so the big fight scene was arranged to the cut we see in the movie.

I tend to agree with that but the version I heard was they shot the scene all of one day and the next day the director still wasn't happy and decided he wanted to do it more.
ford felt terrible so half way through the take he just drew the gun and 'shot' the guy. apparently it wasn't rehearsed or scripted.
