A cracking intro in the 1960's was the Beverly Hillbillies.

As for theme tunes, my favourite has always been Lives and Loves of a She Devil starring Denis Waterman. The theme tune was called Warm Love Gone Cold sang by Christine Collister, which is a very beautiful song.

    Minder.
Just reminds me of being a teenager.
Grange Hill too, and it inspired the Leighton James song.

Patrick Stewart at the beginning of Star Trek The Next Generation and the music (he just edges Shatner even though The Original Series and music are still brilliant).

For a non-Trekkie show - it's Peep Show and the theme music Flagpole Sitta by Harvey Danger (which I could watch on loop).
