All forms of motor racing have done so - virtually all using the iRacing system. IndyCar for example has all the drivers for this season competing. F1's version is crap, they use the codemasters F1 2019 game, iRacing is a far more detailed simulation, not a game.

Other sports it's difficult. FIFA et al are nothing more than games not simulations.
