Better than Lao Gan MA?
I used some Korean Red Chili Oil today to start off a curry.

Talking of Korean, been into Bulgogi for a few years and now also Bibimbap.

Lovely stuff!

I like both Chiu chow chilli oil (the lee kum kee one) and lo gan ma (the original flavour - some of the variants aren't as good)- they are certainly different though.

this stuff is better than both the above though

Chilli oil is great!

You could just make a bowl of rice or noodles, stir a bit of chilli oil in and you have a meal, you could start off cooking a dish with it or just stir a bit into a stew.
Very tasty and very versatile.

I'm not sure I would call it Chilli Sauce in the way that Sriracha is.
I just took a photo of what I just made but can't upload it for some reason.

I made my own last year. Using red Thai chilies. I've got more red Thai growing this year, jalapenos, habaneros and ghost. The ghost are ****ing mental. I usually pickle them.

Absolutely you should!
I'm sure that you dan order some specialist hard to find ingredients on Amazon.

Szechuan peppercorns are a must.
I would try to get some Gochugaru (Korean Pepper Flakes) but normal chilli flakes would work.

We've been growing chillis for years - greenhouse and kitchen windowsill - different varieties and some lucky dips. Addicted!

Usually dry or freeze the surplus.

neither chiu chow or lo gan ma are especially hot, but both have a nice flavour.
chiu chow is a chilli oil, whereas lo gan ma is chilli crisp in oil.

the chili oils you get from this country seem to be mostly either completely bland and tasteless or just hot without a good flavour

I like all of the above, it's just different to a regular chilli sauce.

sriracha is just a chili sauce really, so you definitely want to add some flavour to the stir fry first

season it.
the Mrs will add salt, pepper, a teaspoon of sugar, cornflour, Chinese cooking wine and soy sauce and leave it to rest in that for at least 15 minutes before cooking

It's kind of mellow but flavourful..not too hot at all.
It goes great with a bit of mayonese.
Chuck it in a wrap with some chicken.

Yes it's got a bit of poke but it doesn't linger

I really don't like very hot chilli , it ruins any flavour in the dish by completely obliterating it
