I like pan fried chicken , pork , beef , fish with most vegetables .....its beansprouts and water chestnuts I don't like

You can put what you like in a stir fry sludge, a few spoons of soy, a couple of oyster sauce, a dash of sesame and a pinch of salt, and it'll basically taste like your local Chinese chow mein.

make sure you properly season the meat first, like a minimum of 15 minutes before you cook it.
add salt and pepper, a teaspoon of sugar, Chinese cooking wine, soy sauce and cornflour, mix it around and leave to sit for a while, even if you're adding more flavour to the stir-fry.
makes a massive difference

I think the primary aim though is to cut cals with wine flour and sugar not the best
