How would that logic work with Joe Root a part time bowler taking 5-8.

India needed to win this series by 2 clear matches to qualify for the World Test Championship, after losing the first one they made the decision to make poor pitches. The thought their bowlers batsmen would cope with a complete minefield better, and they have.

Is home advantage to that extent good for the game in general?

To address you point about the straight ball, if the average ball is turning by more than 5% the straight one will get you because you are playing for turn. It is why seam bowlers throw in a crossed seam delivery when the ball is swinging.
