Me. Chef.
Didn’t like the crap pay and the long hours but would have loved to have been one
I find watching The Repair Shop on the telly very therapeutic.
Would love to have to have been some sort of craftsman. Something you can completely immerse yourself into and see the end-results. Hopeless at fixing anything unfortunately.

Serious answer, probably a musician. A concert level classical guitarist if I could choose any genre. The biggest regret I have is not learning musical theory as a youngster. Although having a butterfly brain I would struggle to devote all my energy to one pastime.
Same applies to painting. I've done watercolours and been pleased with the results but wish I'd learned more at an early age. Being a much sought after artist sounds a good career choice to me.
Radio sports commentator. Remember Peter Jones on radio 2 / 5 I always wanted to be him.
Saggar Maker's Bottom Knocker.

A zoo keeper. Love animals, have always had a dog. Would love to have worked with apes.
probably a physiotherapist
would have loved to have qualified, join the military straight after Uni travelled the world, then settle into a good well payed career that actually helps people. Would have also got my football fix by working with with a local football team that needed support. welsh league or something.
Unfortunately I did not really know what I wanted to do at 18 so went to uni and completed a generic business degree.
I am now doing a RICS Building surveyors masters via open university, and looks like that will be my future career hopefully, I am optimistic about building surveying as a career and think I can be happy doing it. Just not the perfect choice if I had my time again.
Accountant, as I was good at maths.
But on caareers night, they persuaded me that "you don't need maths - everything's done by computers" (This was 1970)
So I went into computing.
Did OK out of it, but then the outsourcing started, and I fount it necessary to take release/early retirement at 53 (health had a big say)
Move on to 2010, my accountant son-ion-law gets to travel all over the world (pre-virus) and earns a fortune.
Rock star, Premier League footballer or F1 driver.
wanted to go into the RAF but failed my medical with my hearing after passing all the aptitude tests
Free scoring striker for Cardiff City for 15-20 seasons in any division, but preferably in the Premiership.
I would have loved to have had a career in music or art as they are two of my big loves/hobbies.
Sadly, as I don’t have a creative bone in my body or an ounce of musical ability it was never going to happen.
I have had to settle for turning my hand to whatever I could but I still dream.
