I wouldn't buy another HP one if I were you, they are shite these days. Dell are pretty good though, and reasonably priced.

I'm current running Windows 10 on a 2015 HP Pavilion i3 laptop with 8GB RAM and 2TB drive. 15.6" display and dvd rw drive. It runs ok but takes a while booting up.
Looking for a new laptop which boots faster. Main apps I use are MS office and sometimes photo editing.
I also run iphone, ipad and apple watch so macbook a possibility but apple stuff seems to be outdated so quickly.
Dubious of some of the cheap and cheerful stuff and want something reliable.
Anyone got any good experiences or suggestions?

Dell laptops every time. We have used them since the early 2000's and all have performed excellently. I also have an old Dell desktop (which is still used every day) with additional RAM that I installed myself, an SSD to replace the original HDD to pre-empt possible failure of the latter, and now with Windows 11.
