I'm stuck in a Travelodge in a motorway services tonight. My phone is telling me I'm connected via 5G. The service is completely shit, I don't see any difference from 3G. Is this really the way forward?

It sounds a bit like when the Windows Millennium Edition was released for PCs, absolute shite and a new version followed soon after.

An awful lot of '5G' masts are basically dual bonded 4G, so are using old technology in order to appear like 5G and give 5g like speeds.
When true 5G comes online they'll need quite a few more masts, albeit physically smaller, to cope with 5g's higher frequencies as the radio waves won't travel as far / penetrate buildings as well as lower frequencies.

we are still a fair way away from having 5G in the UK

4 or 5 years ago I spent hours trying to buy an FM/AM radio - practically laughed at in the shops. DAB was the 'future', and you'd better get with it.
